REINVENTION: Easy Recipes for Leftover Foods

The Holidays may be over but you must be left with leftover foods. Instead of just storing them in your fridge, why not reinvent a meal from them? From this article, I will be giving you recipe ideas on how to make a delicious meal out of leftover foods.

BEEF

Beef Wraps



Ingredients:
- Leftover Grilled/Roasted Beef, cut into strips
- Bell peppers, cut into strips
- Onion rings
- Tortilla Wraps or Pita bread
- Salt and Pepper to taste
- Mustard and Mayonnaise
- Cooking oil

Procedure:
Just saute beef, bell peppers, and onions in a pan with a little oil until the vegetables are slightly wilted. Season with salt and pepper according to your taste preference. Heat the wraps. Combine mustard and mayonnaise together, then season with salt and pepper. Spread a little amount of the dressing to the wrap then add the sauteed beef. Roll the wrap. Serve.

PORK

Pork Stir Fry


Ingredients:
- Leftover cooked Pork, cut into small cubes
- String Beans, cut into strips
- Carrots, cut into strips
- Onion and Garlic
- Water
- Cornstarch, dissolved in water
- Salt and pepper to taste
- Cooking Oil

Procedure:
Saute onion and garlic. Once garlic is already golden brown and onions are a little caramelized, add in the vegetables. Cook until slightly wilted. Add the pork cubes then saute. Add a little water then simmer for five minutes. Add the dissolved cornstarch then simmer until sauce thickens. Add salt and pepper to taste. Serve with rice.

HAM



Hawaiian Pizza Squares

Ingredients:
- Leftover Ham
- Pineapple Tidbits
- Onion rings
- Pizza sauce/Spaghetti sauce
- Cheese
- Ready-to-use Pizza Crust

Procedure:
Spread the sauce in the crust then assemble the ham, pineapple and onions. Sprinkle with cheese. Cook in an oven for 8-10 minutes or until the cheese melts. Cut into squares. Serve.

CHICKEN



Chicken and Corn Fritata

Ingredients:
- Leftover Roasted Chicken, shredded
- Corn kernels
- Onions, chopped
- Green onions, chopped
- Eggs, beaten
- Cream
- Cheese, grated
- Cooking oil
- salt and pepper to taste

Procedure:
Saute chicken, corn, onions in a pan over medium heat. Cook for three minutes. In a bowl, combine egg, cheese, cream, and garlic. Season with salt and pepper. Add in the chicken mixture then mix. Pour in a pan the cook for 5 to 6 minutes or until the eggs are set. Place in an oven and cook for three more minutes to let it fully cook. Serve warm.

SPAGHETTI



Pizza Spaghetti

Ingredients:
- Leftover Spaghetti, with sauce
- Eggs, beaten
- Cheese
- Milk
- Salt and pepper to taste
- Cooking Oil

Procedure:
In a bowl, combine spaghetti, eggs, cheese, and milk. Mix them together until everything are incorporated. Season with salt and pepper. Cook in a preheated pan for 8 minutes. Flip to cook the other side for 6 minutes. Serve warm.

BREAD



French Toast in a Cup

Ingredients:
- Leftover Sandwich Bread, cut into cubes
- Cinnamon powder
- Eggs, beaten
- Milk
- Sugar
- Vanilla Extract (optional)
- Maple Syrup

Procedure:
Combine milk, eggs, and cinnamon in a bowl. Mix well. Add a little sugar and vanilla extract for added sweetness. Place the cubed bread in a cup of your preference. Pour in the milk mixture. Cook in a microwave oven for three to five minutes. Once done, drizzle it with maple syrup on top. Serve warm.
